1     pound    Fresh Picked Basil
3     Cups     Extra Virgin Olive Oil
1     Cup    Raw Pine Nuts
3     Oz    Grated Parmesan Cheese
¼    Oz    Capers
¼    Oz    Minced Garlic
2.5 Oz     Cooked Potato
½   Oz     Salt
2    Ea    Small Mint Leaves
¼   Oz    Ground White Pepper


1.    Wash basil and remove stems
2.    In a bowl, add olive oil, parmesan, garlic, mint, potatoes, pine nuts, capers, pepper, and salt.  Mix with an emulsion stick blender until the base is smooth. 
3.    With the mixer still running, add the basil step by step until your pesto mixture is fiber free.
4.    Once blended well, the pesto is ready to be used!
