Homemade Potato Chips
 Makes 6 servings
 
Ingredients
 Canola Oil
For frying
Russet Potatoes, thinly sliced
2 each
Salt
To Taste
 
Method of Preparation
 1.    Gather all ingredients and equipment
2.    In a large heavy saucepan, fill oil no more than halfway 
3.    Heat the oil to 350 degrees
4.    Add the potato slices in batches
5.    Fry until golden brown, about 2 to 3 minutes
6.    Drain on paper towels
7.    Season with salt and serve

 

Pimento Cheese
 Makes 2 Quarts
 
Ingredients
 Cheddar Cheese, grated coarsely
1 pound
Pepper Jack Cheese, grated coarsely
1/2 pound
Mayonnaise
2/3 cup
Diced Pimentos, not drained
1 (4oz) can
Green Pepper Sauce
1 1/2 teaspoons
Granulated Garlic
1/4 teaspoon
Granulated Onion
1/4 teaspoon
Freshly Ground Black Pepper
1/2 teaspoon
Cayenne Pepper
1/8 teaspoon
 
Method of Preparation
 1.    Gather all ingredients and equipment
2.    Mix all the ingredients for the spread in a medium bowl (it is easier if the cheeses are cold)
3.    Transfer into ramekins or other small serving dishes
4.    Cover and refrigerate until set, at least 30 minutes
Serve with crackers
