Heidi’s Holiday Sliders

Makes 25 bite-sized sliders or 12 (2 inch) sliders

1 Tbsp. extra virgin olive oil
1 cup finely diced celery
1/2 cup finely diced onion
1 Tbsp. dried  or fresh sage leaves
1 lb. local sausage (available at area Farmers’ Markets) or you can make your own pork or chicken sausage (recipe below)
25 small rolls or biscuits

Heat olive oil in a small saucepan until aromatic. Add celery, onions and sage. Sauté until onions are slightly browned. Remove from pan and place in a bowl. Add uncooked sausage and blend well to mix. Divide the mixture into 20-25 small patties, pan fry in a nonstick saucepan or grill in a grill pan until nicely browned on both sides. Transfer to a small bun or biscuit and serve hot.

Heidi’s Homemade Chicken or Pork Sausage

For 1 lb. hot or mild pork or chicken sausage: Combine or make your own by combining:
• 2-3 chicken boneless skinless chicken thighs or 1 pork tenderloin in a food processor fitted with the mental blade along with
• 1 tsp. crushed red pepper flakes (less to taste)
• 2 tsp. hot smoked paprika
• 1 Tbsp. ground fennel seed
• 1 tsp. mustard seed
• 1 tsp fresh or dried sage leaves, minced or crumbled
