Hoppin' John (good luck for the New Year)
January 7, 2013

3 cans (15 oz ) black eyed peas, drained
3 T  oil
1- 13 to 14-oz pkg keilbasa, sliced 1/2 inch thick
½  package frozen okra, sliced
2 large onions, chopped
1 can (10 oz) diced tomatoes and green chili's
2 cups chicken broth
1t Salt
1t Pepper

Heat oil in a large pot or dutch oven over medium-high heat.  Add onions, cook till almost done then add sliced kielbasa and cook for 6 to 8 minutes.
Add drained black eyed peas, broth, tomatoes, green chili's and okra. Serve over Food Lion boil in a bag rice. ( 2 bags)
