Pear Cobbler with Cranberry Streusel

Ingredients
Unsalted Butter, room temperature To Butter Dish
Granulated Sugar To Dust Dish
Bartlett Pears 4 each
Vanilla Extract 2 Teaspoons
Brown Sugar ¼ cup
AP Flour 2 Tablespoons
Cinnamon 1 Teaspoon
Ground Nutmeg ½ Teaspoon
Streusel Topping
Unsalted Butter, softened 1 stick
Brown Sugar ½ cup
AP Flour ½ cup
Kosher Salt ½ Teaspoon
Fresh or Frozen Cranberries 1 cup
Method of Preparation
1. Gather all ingredients and equipment
2. Preheat oven to 350 degrees
3. Butter 8 X 8 inch baking dish; dust the dish with granulated sugar, tapping out the excess
4. Peel the pears and cut them in half through the stem end
5. Using a melon baller, scoop out the cores
6. Put the pear halves in a large bowl and sprinkle them with vanilla , and toss
7. Sprinkle over the brown sugar, flour, cinnamon and nutmeg and toss so the pears are well coated with the flavorings
8. Set the pears in a single layer, cored side down, in the prepared baking dish
9. Now make the topping---in the same bowl, combine butter, brown sugar, flour, and sugar and mash it all together with your fingers
10. Toss in the cranberries
11. Crumble the topping mixture over the pears in the baking dish and bake until the topping is nice and crunchy and browned and the pears are tender, 35 to 40 minutes
12. Serve with Ice Cream
