Ahi Tuna Poke, avocado, serrano chilies, pineapple, soy sherry, puffed rice

1 pound ahi tuna, large dice

2 Tbsps. sliced scallions

2 Tbsps. sliced shallot

1 each serrano chili, sliced very thin

1 cup pineapple, medium dice

2 each pink radish, sliced very thin

1 Tbsps. sesame seeds

Salt and pepper, To Taste

2 Tbsps., soy sherry

1 Avocado diced


Method: Mix all the ingredients together and season to taste.

For the soy sherry:

1/4 cup soy sauce

1/4 cup sherry vinegar

1/4 cup mirin

1 Tbsps. xanthan gum

Method combine all the ingredients and agitate with an immersion blender
