CHARLOTTE, N.C. -- Former Carolina Panther Muhsin Muhammad was in the studio Thursday talking about how to make the perfect wings for Super Bowl Sunday.
“Just the smell of the chicken wings, it says football,” Muhammad said.
Who does he think will win the Super Bowl?
“I personally will probably go with the Pittsburgh Steelers,” Muhammad said. “I’m going to go with probably a little more established team. They have 25 players who have been there, done that, as opposed to only two on the Green Bay Packers.”
Muhammad shared the recipes for three different flavors for chicken wings.
Medium Base
3 cups of melted butter or margarine (6 sticks)
2 cups of Frank's hot sauce (One 16oz bottle)
1 tsp ground cayenne pepper
1 tsp granulated garlic
Melt butter. Add hot sauce,whisk in seasonings.
This yields 5 cups. So you can make 2 other flavors listed below and reserve the other cup for regular medium wings. The wings should be hot and the marinade warm.
Put 8 to 10 wings in a medium shallow bowl and ladle sauce over the wings. Swirl them around in the sauce and remove to plate or to baking rack to drip if you prefer your wings less "wet".
If you want to reheat the wings put them on a baking sheet in the oven. Not in the microwave.
Cajun Wings
2 cups of Medium Base
1/3 cup mayo
2 tsp of Cajun seasoning like Paul Prodhumme
Mix seasoning and mayonnaise together to form a paste. Slowly add WARM marinade and whip until blended thoroughly. The mayonnaise helps the seasonings emulsify through the butter and sauce and cling to the wing.
Lemon Pepper Wings
Follow same procedure with lemon pepper seasoning
Flamin Parmesan
(NO mayonnaise in this one)
2 cups of Medium Base
1/3 cup grated Parmesan (just the plain old kind in the green paper shaker tube is fine because it's grated very fine)
1 tsp dried basil
1 tsp crushed red pepper flakes
