Use as much food that does not come from an animal as possible (think vegan). So, avoid cheese, meats, dairy, mayo-- these are the foods that can spoil quickly in warm weather.
If you do use meats, cheeses or dairy, make sure to pack cooler with lots of ice packs. Never pack perishable foods without ice packs.
Toss blanched (quickly boiled) vegetables with prepared salad dressing and set in the refrigerator to marinate until ready to pack into the cooler.

1 baguette, sliced in half from end to end
Taste of Inspirations Roasted Red Pepper and Tomato Bruschetta
Gourmet olives, roughly chopped
Red onion, thinly sliced
Arugula, dark salad greens or pre-washed spinach
Spread top and bottom pieces of baguette with roasted pepper and tomato bruschetta, then spread bottom piece with hummus and layer on olives, onion slices and greens. Place on top and slice into serving pieces.
Roasted Pesto Potato Salad with Artichoke Hearts
2- organic potatoes, cut into cubes
1 large red onion, sliced into thick slices
1 can quartered artichoke hearts, drained
Pre-heat oven 400º. Toss potatoes and onion slices with olive and roast until potatoes are golden and onions are caramelized. Remove from oven and allow to cool, then toss with pesto and artichoke heart quarters. Serve warm, room temp or chilled.
