Cobb Salad Wrap
Needed:
-5 boneless chicken breast(add two boneless thighs for extra)
-Your favorite large tortilla wraps
-2 large tomatoes
-1 large cucumber
- 1 avacado(I don’t add because I don’t love avocado)
-half of a purple onion
-3 hard boiled eggs
-4 strips of crispy bacon (cook on a baking sheet at 400 until crispy)
-Parmesan Crisp
-Small block of sharp cheddar cheese (cut into tiny chunks)
-2 heads of Romaine Lettuce
-small 8 oz sour cream
-4 limes
-chili powder
-onion salt
-salt/pepper
Seasoning for chicken breast/thighs:
-Lime juice
-chili powder
-salt/pepper
-onion salt
-olive oil
-Cover generously with all of the above....and bake at 425 for 20 minutes
(-will serve at room temperature and chopped in the wrap)
Chop all veggies...lettuce....bacon ...eggs and cheese in bite size pieces
And crunch up Parmesan crisp(easy to make at home...use a baking sheet with oil and pile up Parmesan cheese and then bake at 400 until crispy...so so easy and yummy...or you can buy them:)
Salad dressing:
Use entire container of sour cream
- add desired amount of lime juice ...onion salt ...black pepper to taste .......
-Then add chopped cooked chicken(bite-size pieces) and dressing to the salad mixture....make sure bowl is filled with everything equally so you can have a bite of everything in every bite!
Things you could add for more:
-Corn cut off the Cobb
-Chopped Red pepper
-green peas
-mozzarella cheese cut in tiny blocks
-a store bought dressing:) if you’re not in the mood to make homemade dressing
