How to make jollof rice

Jollof Rice

Total cook time: 20 minutes

Ingredients:

- 1 pack shaved Brussels Sprouts

- 1 table spoon Earthly Blend Seasoning, sold locally at Rhino Market Deli And Black Hawk Hardware 

- A hand full dried cranberries

- 1 small onion chopped

- 1 red bell pepper (you can play here and change color of pepper to match the season that you are in)

- 1/2 cup olive oil

- 1 cup white rice already cook

- A pack spring salad mix with arugula

Directions:

Turn heat to mid-high

In an in-door grilling pan roast Brussels Sprouts until it’s a little light brown. remove from heat to cool.

Turn heat to high. In a deep pot, add oil, bring it to med-hot and add onions, peppers, Earthly Blend and fry till onions are light brown.

Add cooled Brussels sprouts, add cooked rice and stir well.

Take off heat, let it cool off to mid-warm, add cranberries, a desirable amount of salad mix, stir up again, garnish with some fresh rosemary and enjoy.
