2 plump garlic cloves

14 oz sharp cheddar cheese, cut into 1" cubes

1 teaspoon Dijon mustard

3/4 cup pilsner beer, flat, room temp

1/8 teaspoon ground cayenne pepper

Purée garlic and cheese in a food processor until chopped small, about 20 seconds. Add mustard, beer and cayenne and process again until fluffy, about 2 minutes.

Spoon into a ceramic bowl cover and refrigerate until ready to eat-- up to one week-- serve with crackers, soft pretzels or as a sandwich filler.
