Chicken Fajita Nachos Recipe :
- 3 oz. cooked tortilla chips
- 6-8 Tablespoons queso
- ¾ cup grilled chicken (cubed)
- ¼ cup fajita veggies (cut into strips)
- 1 teaspoon olive oil
- Pinch of kosher salt
- 2 oz. Cholula Corn Salsa
- 4 Tablespoons pico de gallo
- 2 Tablespoons onion
- 2 Tablespoons jalapenos
- Drizzle of sour cream
Cooking Procedure:
- Grill marinated chicken thighs and cut into 1” cubes.
- Drizzle 1 ounce of olive oil into a skillet and add ¼ cup fajita veggies. Add a pinch of kosher salt and cook for 4-6 minutes or until cooked on the outside and crisp inside.
- Place tortilla chips onto a large plate and pour the queso evenly over the chips.
- Add grilled chicken and fajita veggies.
- Top with your preferred toppings! We added Cholula Corn Salsa, pico de gallo, onions, jalapenos, and a drizzle of sour cream.
