French Toast:
Dip French toast into batter, and grill until golden brown.
Batter
4 eggs
1 cup heavy cream
1 cup half and half
2 tsp vanilla extract
Vanilla Bean (if desired)
1 tsp cinnamon
Catherine’s Quick Caramel Sauce
In a saucepan heat until butter melts:
1 cup brown sugar
1 cup butter
Remove from heat and add
2 Tbsp rum or brandy
Add ½ cup heavy cream (or more if you like a lighter color of caramel)
Strawberry Butter
1 pound of butter –room temperature
1 cup strawberry jam
1 cup powdered sugar
Whip in a countertop mixer until it looks like pink frosting.
Raspberry Mascarpone Filling for French Toast
½ cup mascarpone
½ cup raspberry jam
¼ cup pureed raspberries (strained to remove seeds)
Mix together well and stuff French Toast before grilling.
