Kartoffelpfannkuchen (Potato Pancake)
Ingredients
- 2 ¼ Pounds Russet Potatoes, grated
- 10 oz. Yellow Onions, grated
- 1 tsp. salt
- 3 Large Eggs, beaten
- 3 Tbsp. Flour
- 1 tsp. Salt
- 6 oz. Lard for frying
Directions
1. In a mixing bowl, combine the grated potato, onion, and 1 tsp. of salt. Squeeze out as much moisture as possible.
2. Return the squeezed ingredients to the bowl and add the eggs, flour and remaining salt. Mix to form a batter.
3. Add enough of the lard to a heavy skillet to reach 1/2 inch up the sides of the pan. Heat over medium heat.
4. Place scoops of the batter in the pan and flatten to a 1/4 inch thick cake. Cook until golden brown on both sides. Season with salt and pepper.
Homemade Applesauce
Ingredients
- 4 apples, peeled and diced
- 1/2 cup water
- 1/4 cup sugar
- Large Pinch cinnamon
- Large Pinch Salt
Directions
- Put apples in a pot. Add water to pot and bring to a low boil over medium heat, mashing apples as they cook down. Keep the pot covered.
- When desired consistency, add sugar, salt, and cinnamon. Bring to a boil and then recover and remove from heat. Let cool in the pot and then refrigerate.
