Peruvian Quinoa Parfait

Serves 5


1 ½ Cups Quinoa

3 Cups Water

3 Cups 2% milk

6 Tablespoons Honey

½ Cup Lemon Juice

Peel of 1 Lemon

1 teaspoon ground Cinnamon

1 teaspoon Vanilla extract

½ Cup diced fresh Apple

½ Cup Blueberries

½ Cup Strawberries

½ Cup Vanilla Greek Yogurt 

Dried fruits to decorate (optional) 


Wash and rinse quinoa. 

Sauté in a heavy saucepan the quinoa, then add cinnamon, lemon juice, vanilla, and lemon peel. 

Add water and bring to boil. Lower the heat and cook for about 20 minutes, stirring now and then. Discard the lemon. 

Add milk and honey. Continue cooking stirring constantly until it is creamy. Turn off the heat and let it cool. 

To serve, a five cocktails glasses and add a layer of vanilla Greek yogurt at the bottom of each glass, then add the cooled creamy quinoa mixed with fresh fruit. Topped with a spoon of Greek yogurt (dried fruit optional) and dust with cinnamon powder, use a strawberry to decorate and serve at room temperature.
