CHARLOTTE, N.C. — Chef Jenny shows NBC Charlotte how to make a quick and easy brick chicken dish that takes just 15 minutes to prepare. With two minutes more, Jenny demonstrates how to make hollandaise sauce in the microwave. The recipe shared below.

Microwave Hollandaise:

  • 1/2 stick butter, cubed
  • 2 large egg yolks
  • Lemon juice to taste
  • Salt & cayenne to taste

Microwave butter for about 15-20 seconds until mostly melted, but maybe a chunk or two left. Whisk.

Add in yolks, lemon juice, and seasoning, whisk well until smooth, then microwave in 10-second intervals, whisking well between zaps, until light yellow, thick and silky. Adjust seasoning and lemon juice and serve.

*If, during microwaving spurts, the sauce begins to curdle, don't panic, just whisk in a teaspoon of very cold water and the sauce will become silky again.
