CHARLOTTE, N.C. — Caribbean Shrimp Lettuce Wraps with Mango Salsa and Chipotle Aoili

INGREDIENTS

Romaine Hearts

1lb of Shrimp

2 Tbs Caribbean Spices

 

MANGO SALSA

2 Mangos

1 Red Bell Pepper

1 Green Bell Pepper
1 Jalapeno

½ Red Onion

2 oz Cilantro

Juice of 1 Lemon

Chop and Mix

 

CHIPOLTE AOILI (Vegan)

1 Can of Chipotle Chilis

2 Cups of Soy Milk

4 Cups of Oil Blend (1/2 olive oil and half oil of your choice)

2 Tbs Garlic Powder

Juice of 1 Lemon

Blend and fold in Chipotle peppers

  1. Add 1 oz of olive oil to cast iron skillet then heat on high. Toss shrimp in Caribbean spices and add to skillet. Cut down to medium/medium high heat.
  2. Prepare mango salsa by chopping ingredients then mixing.
  3. Prepare chipotle aioli by blending ingredients then fold in chipotle peppers.
  4. Separate romaine leaves then spread layer of chipotle aioli.
  5. Once shrimp is cooked add to lettuce and top with mango salsa
