Watermelon Gazpacho with Crab

Makes 4 servings

Ingredients:

  • 5 cups cubed watermelon
  • 1 cup peeled, seeded, and diced cucumber
  • 1/4 cup chopped red onion
  • 1 jalapeño pepper, diced
  • 1 cup TEN Spring Water
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt, or to taste
  • 8 oz jumbo lump crabmeat, picked over
  • 1 avocado, diced
  • Cilantro, roughly chopped for garnish

Directions:

Process the first 8 ingredients in a blender until smooth. Cover and chill at least 1 hour, up to 1 day. Stir and taste for seasoning. Serve in 4 bowls or glasses topped with crabmeat, avocado and cilantro. Hydrate…#LikeYouMeanIt
