Bruschetta 3 ways

Pico Bruschetta

Needed:

-Loaf of Italian bread or a baguette from your grocery bakery section

-5 Roma Tomatoes

-purple onion

-2 Serrano chili pepper

-yellow pepper

-fresh cilantro

-3 lemons

-Butter

-garlic powder

-onion salt

Chop all veggies super small:)

Especially the Serrano chili(leave our the seeds)

Chop and dumb into a large bowl

Add the juice of two lemons and chop cilantro and add a little to mixture and salt/pepper to taste

-Have bakery slice your bread in half inch slices before you leave store

Melt a stick of butter with some lemon juice...a little garlic powder and onion salt

-cover the bread on both sides with mixture and

Bake at 400 for about 10 minutes....always watching...to make sure not to make too crispy

Add pico to the top and eat as you prepare the next Bruschetta

Pizza Bruschetta

Use the butter mixture from above and add to another sliced loaf of Italian bread...add some mozzarella to the bread and for about 5 minutes or until cheese is melted

-Needed:

-small pepperoni’s

-Your favorite pizza sauce

-fresh mozzarella

-mushrooms(already browned in some butter and Worcestershire sauce)

-shredded Parmesan

-fresh jalapeño pepper

(More ideas for topping: chopped onion..chopped green pepper ...chopped olives ...chopped hot banana peppers ...chopped ham...)

In a bowl chop in very small pieces ..the pepperoni ..mushrooms and add in the chopped fresh mozzarella ....and a little shredded Parmesan

Mix in some your pizza sauce

-add mixture to the mozzarella cooked bread and then top with more mozzarella and cook for about 15 minutes at 350....

Garnish with finely chopped jalapeños when they come out of oven if you like spicy

(Make two loaves of this ...so every body gets plenty!)

Dessert Bruschetta:

Needed: -another sliced Italian bread loaf

-fresh strawberries

-fresh kiwi

-fresh watermelon

-fresh peaches

-apples

-cinnamon

-sugar

-Butter

-powdered sugar

-the juice of one orange

-the juice of one lemon

-Soak the bread in Butter and top with cinnamon sugar and bake at 375 to crisp up

-cut all the fruit in tiny bite size pieces and add a half cup of powdered sugar and juice of an orange .....add a little lemon juice if needed to thin out.

-add mixture to cinnamon sugar rounds and top with favorite chocolate sauce and Carmel sauce
