The Trittens share their take on "Frico" a.ka. the tasty, cheese crisp

Frico is perfect for a quick snack in small bunches, or an appetizer

CHARLOTTE, N.C. — This morning we are in the kitchen with our good friends Andy and Melanie Tritten from Cannizzaro Famiglia and they are serving up their take on "Frico".

“We are doing our take on Frico” says Melanie. Typically, Frico is a little cheese crisp made with only parmesan cheese and used as a garnish for soup, salad, and on a cheese & charcuterie board.

“We have made this into a great little snack or appetizer” says Andy. They can be made in large or small batches so they are great for a quick protein packed snack and can even be made in the toaster oven so older kids could make these for themselves too. Great if you are keeping a gluten free or low carb diet too.

Frico – the Little Cheese Crisp

Ingredients 

1 Cup Shredded Parmigiano Reggiano

1 Cup Mozzarella

1 Cup Cannizzaro Marinara, Mushroom Marinara or Arrabbiata Sauce

Any of your favorite pizza toppings – Pepperoni, Olives, Onions, Jalapeno or Banana Peppers, Sausage, even left over roasted veggies.

Directions 

Mix together the 2 cheeses in a bowl.

On a sheet pan lined with parchment paper or a Silpat, spoon cheese in about 3 inch flattened circles, about 2 inches apart.

Place a dollop of sauce in the center and your favorite toppings.

Bake at 400 degrees for 6-9 minutes or until brown around the edges.

Let cool and remove – enjoy!
