Recipe: No cook white sauce

Chef Jack Acheson shows us how to make a versatile and delicious Italian white sauce.

White Cheese Sauce:

2.5 pounds Ricotta Cheese

1 pint heavy cream

1/2 cup grated parmesan

1 Tablespoon dried oregano

1/2 Tablespoon dried basil

1/2 teaspoon black pepper

1 teaspoon granulated garlic

Combine all ingredients using a food processor of handheld blender.

Cajun Chicken Pasta

1/2-1 cup white cheese sauce

1/2 cup heavy cream

1/4 green bell pepper julienned

1/4 red bell pepper julienned

1/4 white onion julienned

1/2 cooked chicken breast

Cajun seasoning as desired

2 cups cooked penne pasta

-Sautee peppers and onions.

-Add cooked chicken and continue to sautee until vegetables are softened through.

- Add white sauce and melt over medium heat.

-Stir in the heavy cream until sauce coats the back of a spoon and shines.

-Add cooked pasta and toss until all of the pasta is coated.

-Season with Cajun seasoning to desired heat.

-Garnish with chiffonade of fresh basil and/or diced tomatoes.
