Stuffed Beef Roll Up
Ingredients:
1lb thinly sliced beef or veal
Coconut oil
Marinade:
¼ cup of worcheshire
1 tsp Himalayan Salt
½ tsp coarse black pepper
½ tsp chili powder
1 tsp of garlic powder
1 tsp onion powder
½ tsp seasoned salt
1 tsp ground thyme
Vegetables inside roll up:
1 bunch asparagus
1 red bell pepper sliced
1 yellow bell pepper sliced
Miscellaneous ingredients:
Medium sized skewers
Directions:
- In a mixing bowl, combine the meat and all of the marinade ingredients.
- Mix ingredients and allow meat to marinate for 2 hours or overnight.
- After meat is marinated, pre-heat oven to 400 degrees Fahrenheit.
- Lay meat on a flat surface and then place vegetables in a pile on one end of the meat.
- Begin to roll meat over vegetables, creating a roll with meat on the outside and vegetables on the inside. Skewer the roll ups, in effort to prevent the roll from unforming.
- Heat a medium sized sauté pan over medium to high heat.
- Once the pan is hot, add coconut oil.
- When the oil starts to look like water in your pan, add the meat roll up.
- Pan sear roll up for 3-4 minutes on each side, the objective is to get a nice color on the roll up.
- Place roll up on a roasting pan and cook in oven for 10 – 15 minutes.
- Upon finishing the cooking process, allow roll up to rest for 5 minutes.
- Slice and serve over a bed of rice, or if you are keto, place roll up over salad mix of your choice.
