Three recipes for left over Easter eggs

Now that Easter is over, you may have left over hard boiled eggs. Becky Justice shares three easy recipes you can make with those eggs so they don’t go to waste.

How to boil a dozen eggs:

-Put in a pot and cover with water

-Bring to a boil

-Turn off pot and quickly cover with a lid on the burner for 15 minutes.

-Then drain water....let cool ...then peel:)

Simple deviled eggs (packed with yummy flavor)

-Slice in half all peeled eggs

-take out all the yokes

-and add Marzetti Slaw dressing to taste and then refill the whites of the eggs (start with a two heaping Tablespoons and then add to your desire)

-it’s that easy and that yummy!

Topping:

-bacon

-chopped baby dill pickles(the best for crunchy chunks)

Deviled egg pasta salad 

Needed:

Favorite pasta

Marzetti Slaw dressing

Mayo

Mustard

A jar of baby dill pickles

Red onion

Tomatoes

Bacon

Celery Seeds

-Boil the Pasta (smaller pasta like a macaroni noodle work best)

-after cooled...put in a big bowl and start chopping and adding

-add a dozen boiled...peeled and chopped eggs

-chop a whole jar of baby dill pickles

-chop 4 thick cut slices of bacon(or add however much you want)

-add a chopped red onion

-salt and pepper

The dressing:

-In a separate bowl add a half of jar of Marzetti slaw dressing

-Two squirts of mustard

-half of a jar of mayo

-and celery seeds

(All this is to taste ....I like a strong mustard taste....so I start off slow and add till I like it....Marzetti Slaw dressing is sweet so if it seems too sweet ....add more mayo ....I like to see the celery seeds and they are hard to mess up so ...again...start slow but add to your liking......I love this combo and use it for my potato salad, too. )

-Mix the Salad with the dressing

Then top with chopped cook bacon and chopped tomatoes (not necessary for a great pasta salad:)

Blue cheese and bacon egg salad 

Needed:

-Dozen boiled and chopped eggs

-6 pieces of cooked thick cut bacon

-blue cheese crumbles

-homemade ranch dressing

-sourdough bread

In a small bowl add:

-add chopped egg(salt and pepper...I like a lot of pepper in these to give it a little kick)

-blue cheese crumbles(I add about a 1/4 cup.....start there and then add to desired taste...again...start slow)

-add ranch dressing...1/4 cup to start and then add to taste

(Or you could just use Marzetti Slaw dressing for a little sweetness or just mayo....since you have the blue cheese crumbles for flavor already)

-mix all together

-cook the bacon in a 400 degree oven for desired crispness

-Toast the sourdough bread and then add egg salad (you could butter the toast first for maximum deliciousness 

Then top with lots of chopped bacon

(You could also use this idea for just a deviled egg)

I hope you like these three easy egg recipes. I didn’t give a lot of measurements because it really is “to taste”. It’s a perfect way to learn how to come up with your own recipes and test your skills on inexpensive food.
